What I Ate Wednesday: Crab Cake Edition

Hello and welcome to What I Ate Wednesday!  If you’re new to the party, head on over to Jenn’s blog and check out what WIAW is all about.  Today’s highlights in my neck of the woods included some home made crab cakes!

Before we get to the crab cakes, let’s back up a bit.  The day started with the usual scrambled eggs and caffeine/life juice.  That picture was kind of boring, so how about this lovely shot of the hubby’s meal instead.

Lunch included a salad and some left over egg/broccoli/spinach scramble for protein. Tons of veggies with lunch is always a win!

Today’s snacks included a post-gym strawberry protein smoothie, protein bar, and a few bites of leftover Valentine’s Day gluten free pink cake.

Hey, it was going to go stale…soon…right?

The star of the day’s eats, however, was all thanks to the madre.  She knew I was coming by and stocked up on seafood!  We had homemade crab cakes, gluten free penne with olive oil, garlic, and shrimp, broccoli and salad.  Comfort food, seafood style!

My mom makes the crab cakes with a pound of fresh crab, just a sprinkle of gluten free breadcrumbs, lemon juice, mayo, and seasonings.  They’re so good!  You really can’t tell the difference between the homemade and the fancy restaurant version.  Besides, isn’t home made always better?

Today’s dinner was definitely a treat for me.  My husband isn’t the biggest seafood lover so I don’t often make it at home.  I will take it whenever I can get it!
